We have 32 states in Mexico, hundred of big cities, thousands of small towns; and every place you go people cook differently. Thus there are many customs and ways of cooking.
From back in the Aztec times, to the Spanish era and through the Mexican Revolution, the most common, of course, will be the tacos, tamales, tostadas, sopas, etc., etc...But things such as burritos, nachos & chimichangas...not even nowadays in central Mexico do people know what these are!
So you see: there is no such thing as Authentic Mexican Food.

La Especial Norte was opened in 1977. We were the first Mexican Restaurant to open in the Leucadia area. It started as a partnership, but has been run for the past 30 years by one of the originals founders, Angel Salazar, a 46 year resident in the area, originally from Purepero Michoacan, Central Mexico; local high school graduate and Vietnam Veteran.
